The SCOPE.ai project aims to develop an intelligent Artificial Intelligence-based system to support new food product development processes by predicting consumer acceptance and suggesting optimizations to product formulations. The project combines data on consumers’ sociodemographic, psychological, sensory, and biological characteristics with the intrinsic properties of food products, using advanced techniques such as Machine Learning, Deep Learning, and Generative AI. Focused on healthier and more sustainable products, including foods with reduced sugar, fat, or salt content and alternative protein sources, SCOPE.ai seeks to increase the success rate of new food products, reduce waste, and accelerate innovation processes within the agri-food industry. The consortium is led by Sense Test and includes FCUP, INESC TEC, and Colab4Food, with the project running from 2025 to 2028.
